PILONCILLO VITAMINS

Among the main minerals that Chancaca contains are; Calcium (Ca), Potassium (K), Magnesium (Mg), Copper (Cu), Iron (Fe) and Phosphorus (P), as well as traces of Fluorine (F) and Selenium (Se).

  • Calcium: contributes to the formation of better teeth and stronger bones, as well as in the prevention of tooth decay, especially in children.
  • Iron: prevents anemia. This nutrient also strengthens the infant’s immune system and prevents diseases of the respiratory and urinary system.
  • Another element that contributes the piloncillo is the phosphorus, important pillar of bones and teeth, participant in the metabolism of fats, carbohydrates and energy exchanges. Its deficit in inorganic form leads to demineralization of the bones, poor growth in childhood, rickets and osteomalacia.
  • Magnesium: is a fortifier of the nervous system, acts on muscle excitability and serves as an activator of various enzymes such as blood phosphatase. Children who have a normal level of this element are more active.
  • Potassium: is essential in maintaining the balance of intracellular fluid, affects the rhythm of the heart and participates in the regulation of nervous and muscular excitability.

Vitamin A is essential for vision and for the growth of the skeleton and connective tissue and is part of the visual purpura.

Vitamins of complex B such as B1 are involved in the metabolism of acids and lipids. B6 is necessary for the production of red blood cells, participates in the metabolism of essential fatty acids.  

Vitamin D, increases the absorption of calcium and phosphorus in the intestine and Vitamin C. It is an antioxidant, because it neutralizes free radicals, it complies with maintaining the intercellular material of cartilage, dentin and bones.

COLOMBIA, EXPORTING COUNTRY

In this section, we are going to talk about Colombia as an exporter of Piloncillo. Being the second country that exports more panela worldwide followed by India.

The first exporter gives a very artisanal use to the chancaca, piloncillo, gur or, in other words, panela.

Within Colombia, the departments that we can find with the highest production of sweet paper or scraping as they say elsewhere are Santander and Cundinamarca followed by Boyaca, the first with 19%, the second with 15% and the last with a percentage of 13% according to the statistics that Fedepanela shows us (The non-profit trade union organization that represents the paneling producers throughout the country).

CIDECOLOMBIA

Cidecolombia as a Chancaca producer, for example, has its own trapiche for the production of this 100% Colombian natural sweetener, which can be used for juices, desserts, beverages and artisanal foods.

DIFFERENT NAMES OF THE PANELA

The panela is known in different ways in different parts of the world. For example, in Bolivia, Chile and Peru it is known as “Chancaca“, in Venezuela as “Papelón“, in the Canary Islands it is known as “Rapadura“, in Mexico to the south as Panela, however, to the center and north as it is says “Piloncillo” like the coast of Malaga and Granada, in Argentina they call him Chancaca and “Tableta de Miel de Caña” but in the province of missions they call him “Rapadura”.

In addition, it is known as rapadura in Brazil, Cuba, Ecuador and Guatemala while in Costa Rica it is known as “Tapa de Dulce“; Named as “Dulce de Atado” in El Salvador and as “Panocha” in the Philippines, in Guatemala they call it both rapadura and panela.

But, nevertheless, in Panama it is called “Rapadura” and “Raspadura“, and on the other hand in Laos it is also called “nam” and finally in India, Pakistan and Sri Lanka it is called as “Gur” and “Jaggery“.

In conclusion, the Piloncillo has different names, therefore it cannot always be referred to as Panela or Chancaca but as any other name that has been given to it.

PANELA ELABORATION

First of all, it is necessary to know that the elaboration of Panela (Chancaca) is handmade and, secondly, that it is free of all the chemical additives used in the manufacture of sugar products.
